Cinnamon Streusel Bread
Ingredients
Batter
1/4 cup granulated sugar
2 tsp cinnamon
1/3 cup melted coconut oil
1/2 cup plain Greek yogurt
1 large egg
1 Tbsp vanilla extract
1/2 cup maple syrup
2/3 cup milk
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp kosher salt
3/4 cup white chocolate chips
Cinnamon Streusel Topping
1 cup brown sugar
2 Tbsp all-purpose flour
2 Tbsp cinnamon
4 Tbsp salted butter, melted
Instructions
Preheat oven to 350°F. Grease or butter a bread pan and set aside.
Make the cinnamon sugar:
In a small bowl, combine 1/4 cup granulated sugar and 2 tsp cinnamon. Set aside 1 tablespoon of this mixture for the topping.Prepare the batter:
In a large bowl, whisk together the melted coconut oil, maple syrup, Greek yogurt, egg, vanilla, and milk until smooth.
Add in the flour, baking soda, and salt; mix until just combined.
Fold in the white chocolate chips.Layer the bread:
Spoon half the batter into the prepared bread pan.
Sprinkle the batter with the cinnamon sugar mixture, reserving the 1 tablespoon you set aside.
Evenly spread the remaining batter on top and sprinkle with the reserved cinnamon sugar.Make the streusel:
In a separate bowl, mix together the melted butter, brown sugar, flour, and cinnamon until crumbly.
Spoon or scatter the streusel evenly over the top of the batter.Bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the pan before slicing.
